The Story Behind Strawberry Matcha

This is a Sherbinskis creation, and that name carries weight. Mario Guzman, the man behind Sherbinskis, is responsible for some of the most important genetics of the modern era: Gelato, Sunset Sherbet, Mochi, Bacio. The entire dessert strain movement traces back to his work in San Francisco. Strawberry Matcha crosses two of his in-house lines: Strawberry Mochi, which descends from Sunset Sherbet and Thin Mint GSC through the Mochi phenotype, combined with Strawberry Cough for its berry terps and sativa energy; and Matcha, a Birthday Cake x Gelato 33 cross that adds creamy, earthy body and structural density.

The name says it all. Sherbinskis was going for that specific flavour pairing: sweet berry on one side, green tea earthiness on the other. It’s a culinary approach to breeding, designing a strain around a taste profile rather than just chasing THC numbers.

The Nose

The strawberry hits immediately, ripe and sweet, almost jammy. Then the second layer arrives: earthy, herbal, almost vegetal, like actual matcha powder. That’s the Matcha parent showing through.
